Easy Beef and Bean Dip


ACouple years back, my friend wanted some burrtios so i whipped us some quik and easy filling,

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves minced garlic
  • 2 cans pinto or kidney beans (I used pinto beans from my freezer.)
  • 1 can Rotel
  • 1 pkg cream cheese
  • 1 cup shredded cheddar cheese
  • 1 t. cumin (you may want to add more to taste)
  • 1 pkg taco seasoning
  • Salt to taste.
Brown ground beef with onion and garlic.  Drain.  Mix all ingredients in a slow cooker. (you can even just cook it just keep it covered, and mix a few times.  Cook on high for 2-3 hours or until dip is heated through.  Keep on low or warm until ready to serve.   Serve with tortilla chips.  This could also be served as a filling for beef and bean burritos.  Enjoy!

Kiwi Fruit Cups And Strawberry Dressing.


Fruit Cups with Strawberry Dressing

This fruit salad can't be beat during the hot summer months. Serve as a side dish or dessert.
Total Time: 25 mins
Servings: 6 servings



Ingredients
  • 2 cups  cut-up strawberries and/or whole raspberries
  • 1/4 cup  frozen orange juice concentrate, thawed

    2 teaspoons  sugar
  • 2   kiwifruit, peeled and thinly sliced
  • 1   orange, peeled and sectioned
  • 2   bananas, sliced
  • 1 medium  peach, plum, or nectarine; sliced

    1 small  apple or pear, cored and sliced

1.] For dressing, in a blender container or food processor bowl place half of the berries, the orange juice concentrate, and sugar. Cover and blend or process until smooth; set aside.

2.] In a large bowl combine kiwifruit, orange sections, bananas, peach slices, apple slices, and remaining berries. Serve fruit in bowls with dressing. Makes 6 servings.
